Spicy Queso Scrambled Eggs (Ready in 20 Minutes)

This week, we're sharing one of our favourite scrambled eggs recipe.

When we consulted with our chef, we shared that we wanted to make the recipe Peruvian.

In order to do so, we use our Aji Amarillo marinade paste.

Aji Amarillo is a yellow chili pepper base and is a bit spicy but not overwhelming. It balances the heat with hints of mango and passion fruit flavors to bring out the best in every bit.

Prep time:5 minutes

Cook time: 15 minutes

Ingredients

8 Eggs 

1 tbsp Butter 

1 Green onion

50g Queso fresco or light feta

3 Tomato

1 tbsp Sour Cream 

1.5 Tbsp Aji Amarillo 

To taste Salt & pepper

Directions

Tomatoes:Preheat the oven to 400 degrees. Cut tomatoes in ⅛ and season with salt, pepper and oregano. Bake for 10-15 minutes until golden.

Eggs:Whisk eggs with aji amarillo, salt and pepper. Melt butter on a non-stick pan on medium heat, cook eggs gently while stirring frequently. When eggs are ¾ cooked add sour cream and remove from heat.

Plating & Garnish:Crumble queso fresco, slice green onion. Plate eggs, garnish with cheese, tomatoes, and green onion.
